I'm calling coffee lovers all over the world to introduce the latte of the Christmas season... the biscoff latte! Fall and Thanksgiving have the pumpkin spice latte but winter and Christmas have this biscoff cookie latte. Bold espresso with cookie butter flavor is the perfect match for your taste buds. Biscoff cookie spread is a creamy spread that has a similar taste to gingerbread cookies with warm spices and notes of brown sugar but with a rich caramel flavor. When put into a latte it is such a delicious drink!

ingredients 🧾

Espresso: A double shot of espresso is the base of this latte mixture. There are different ways you can make an espresso shot. A standard coffee machine most likely will not have an option to pull espresso but you can use an espresso machine like the Breville Espresso machine. You can also use a stovetop espresso maker. The french press espresso method can also make very similar espresso coffee by it being strong and smooth. Avoid using a standard cup of coffee, cold brew, or instant coffee powder since the strength is not comparable to espresso and will not create a latte.
Biscoff: You will need 2 tablespoons of biscoff spread or speculoos cookie butter. You can find biscoff at your local grocery store or Trader Joe makes a delicious speculoos cookie butter that is available year round.
Milk: 7 ounces of milk is added to the latte. 7 ounces is just under one cup. Use whatever milk you prefer in your coffee drinks.

Use your favorite milk in the latte. Whatever milk is your favorite is what you should use in this latte. You can use classic like whole milk, or even a plant based alternative like almond milk, coconut milk, and oat milk.
Instead of a hot biscoff latte, make it an iced biscoff latte! Depending on when or where you are drinking this latte, you may want a biscoff iced latte. Iced coffees definitely hit to spot! It is super easy to make this latte iced instead of hot. Still melt the cookie butter in the hot espresso. Then froth your milk while cold. In a mason jar or glass cup, spread loads of biscoff spread on the inside of the cup. Add ice cubes to the top of the cup, add the frothed milk, and then the espresso. Enjoy your iced latte!
If you like sweet coffees, add sweetener. If you are a fan of sweet coffee drinks, try adding a tablespoon of maple syrup or your favorite coffee syrup. You can even make your own homemade coffee syrup by combining equal parts sugar and water over low heat in a small saucepan. Add a drop of vanilla extract or ground cinnamon to amp up the flavor!

Froth your milk. It is an important step to froth your milk for the latte using a milk frother. A true latte has less frothy milk than a cappuccino but it still has velvety frothed milk. The best way to froth milk is using the Nespresso aeroccino frother or a handheld frother.
Make sure the biscoff is completely melted and combined before adding it to the latte. Once adding the cookie butter into the espresso, let it sit for a moment to melt and then use a hand frother or fork to incorporate into the espresso. If it is not fully combined before you add it to the latte, you will have chunks of cookie butter throughout your drink.

Step #4 - Combine all ingredients and top. In a ceramic mug, add the espresso biscoff mixture. Then slowly pour the hot milk into the mug. Top with whipped cream, cinnamon, and crumbles of speculoos cookies.

Yes, cookie butter can be easily warmed and melted. In this lotus biscoff latte recipe, the lotus biscoff cookie butter is added to hot espresso. It melts and easily incorporates into the rest of the latte. You can also just warm up cookie butter in a microwave-safe bowl or cup and microwave it for just 30 seconds to become liquidy. It can then be drizzled on top of a latte or dessert.
