In a small saucepan, over medium heat, combine water, sugar, and chicory root. Let simmer for 5 minutes and then remove from heat. Let sit for another 5 minutes to steep. Pour through a mesh sieve into an airtight glass container. Set aside.
In a tall glass, add the cold brew, chicory root, simple syrup, and milk of choice. Stir until thoroughly mixed.
