In a bowl, combine salt, pepper, paprika, garlic powder, and onion powder. Season the chicken with the spice mixture and place in bowl. Allow chicken to marinate in the mixture for at least an hour.
While the chicken marinates, whisk the buttermilk and egg together in bowl. In a shallow bowl or pan, stir together the flour and cornstarch. Set this by your stove top, in preparation for cooking.
Make the waffle batter while waiting as well. In a bowl, mix together the flour sugar, baking soda, baking powder, cinnamon, and salt. In a separate bowl, mix together the melted butter, eggs, and buttermilk until throughly combined. Then gently stir the wet mixture into the dry mixture.
Now that the chicken mixtures and waffle batter is prepared, it is time to begin cooking. Fill a large frying pan half way with oil and heat until the oil is 350ºF. One piece at a time, dip your chicken in the buttermilk mixture and then coat in the flour mixture. Fry in the oil until the chicken is golden brown and crispy on all sides. When finished cooking, remove the chicken from the oil and place on paper towels.
While the chicken fries, make the waffles. Heat up the waffle maker. Spray vegetable oil cooking spray on the waffle maker, then pour the waffle batter into the waffle maker. Cook until golden brown.
In a bowl, whisk together the warmed maple syrup with the tabasco and set aside for serving.
For serving, place 2 pieces of fried chicken atop a cinnamon waffle and drizzle hot maple syrup on top of both.
