Red Wine and Port Braised Short Ribs

You will need short ribs, onion, carrots, celery, thyme, parsley, garlic, olive oil, beef stock, bay leaves, red wine, port wine, balsamic vinegar, salt, & pepper

Make sure your short ribs are patted dry & generously seasoned.

With the dutch oven over high heat, sear all sides of the beef. Then remove from the pan. Add the vegetables and saute until tender. Add the garlic and bay leaves.

Add the balsamic vinegar, red wine, and port wine. Reduce by one third. Add the beef stock to the wine reduction and stir. Return the short ribs to the pot.

Place the herbs on top of the ribs. Cover with the lid. Cook in the oven at 325F for 3 hours. Let the pot cool and then place in the fridge to chill overnight or at least 6 hours.

When ready to serve, skim the fat from the top of the pot. Place in the oven uncovered at 375F for 20 minutes. Strain the sauce through a fine sieve.

Serve with the strained red wine port sauce over polenta or mashed potatoes.
