You will need apples, sugar, lemon juice, flour, cinnamon, salt, butter, egg, cream, vanilla, brown sugar, and pecans.

Place apple filling ingredients in large bowl.

Combine until every apple is coated. Set aside.

In a small bowl, sift the flour, sugar, and salt. Then using a cheese grater, shred the frozen butter and add it into the flour mixture.

Using a pastry cutter or fork. combine until the mixture resembles fine breadcrumbs. Add in the egg yolk, heavy cream, and vanilla.

Form into a 1 inch dough circle. Cover tightly with plastic wrap, and place in the fridge to cool for at least 30 minutes.

Combine all crumble ingredients in a large mixing bowl or the bowl of a stand mixed and mix until crumble begins to form.

Set crumble topping aside. Using a rolling pin on a lightly floured work surface, turn out the dough and roll to about ¼ inch thick.

Once the dough is rolled out, use a 4 inch cookie cutter to cut out circles from the dough for your tart crusts. Place in your tartlet pans.

On top of the dough, place a heaping spoonful of the apple mixture. Then delicately place crumble on top of the apples.
