Apple Cider Brined Chicken Wings

You will need kosher salt, bay leaf, brown sugar, garlic, pink peppercorns, chicken wings, onion, dry rub, rosemary, lemon, apple cider, sage, and water.

In a large pot or dutch oven over medium heat, combine the apple cider, water, onion, lemon, rosemary, sage, salt, brown sugar, garlic, bay leaf, and peppercorns.

Cook until the sugar dissolves. Then bring to a simmer for 5-10 minutes. Remove from the heat and let the mixture cool completely.

Add the thawed chicken wings into the brine. Let brine in the fridge for 2-8 hours.

After brining, place wings in a single layer on a sheet pan rack over a cookie sheet. Pat the wings dry on both sides. Then place in the fridge covered with a paper towel for at least 30 minutes and up to 2 hours.

In a small bowl, combine all the dry rub seasonings.

Add the dry rub seasoning mixture to a bowl of wings. Toss until all wings are throughly coated.
